hop of those help? Can I use environment variables set in a previous test in the payload I am posting? , Yes, you can do that. You send it up like this
code :
{
    "some_key" : "{{environment_variable_name}}"
}
postman.setEnvironmentVariable("id","some_value")
{
"some_key" : "{{id}}"
}

With these it helps Yes, it is possible. payload-expression uses an EvaluationContext with HttpEntity as rootObject, #requestParams and #pathVariables variables. So, if you change it to POST you can get a body!:
code :
 payload-expression="new RequestDTO(
                         #pathVariables.product,
                         #pathVariables.id,
                         #requestParams['optionalParam'],
                         headers.get('headerKey'),
                         body)"

I wish did fix the issue. How about adding . ~git/.profile at the top of your post-receive hook script (assuming it's sh).
It's unclear exactly what you want, though. You either want:

I hope this helps . You don't need for loop to do this, in the public void data create List
code :
public void data(@RequestBody DataRequestModel dataRequestModel)  {

  List<Payload> list = new ArrayList<>();
  // first object
  Payload payload1 = new Payload();
  payload1.setGuid(//set value);
  payload1.setLongValue(dataRequestModel.getData().getValue1().getVal());
  payload1.setTimestamp(dataRequestModel.getTimestamp());
  list.add(payload1);
  // second object
  Payload payload2 = new Payload();
   payload12setGuid(//set value);
  payload2.setLongValue(dataRequestModel.getData().getValue2().getVal());
  payload1.setTimestamp(dataRequestModel.getTimestamp());
  list.add(payload2);

it helps some times I think the easiest way is to use the Evaluate keyword from BuiltIn library. It executes a Python expression and returns the result.
${newQuantitiy}= Evaluate $Quantity1 - 4
