How can one draw a background in the elastic portion of an NSScrollView?

Any of those help Well if at first you don't succeed (and nobody has answered your question on SO yet)...
What worked is to add a subview to the NSClipView (not the NSScrollView) constraining it to be adjacent to the documentView where the elasticity is arising. That's all...

fixed the issue. Will look into that further This is a bit off-topic, I think, since it's not "how to use a background texture in NSScrollView" but "where can I find a similar graphic"? But you'd only know that if you knew it wasn't a system-supplied texture. :-)
This is a custom graphic and is not available via the system. You'll need to create your own, license someone else's or find one that is free for commercial use. Search the web for "linen background" or "linen texture" etc. If you have Photoshop, there are tutorials out there for creating your own Mac-like linen pattern.

fixed the issue. Will look into that further My only suggestion is to make sure that your NSScrollers are of the default style, or set to a class that overrides + (BOOL)isCompatibleWithOverlayScrollers if you are using a custom scroller.
In IB, check that "Default Style" is selected under "Scroller Knobs", second from the top.

help you fix your problem You probably don't want to use subviews for this. There is a CALayer subclass for exactly this purpose: CATiledLayer: https://developer.apple.com/library/mac/documentation/GraphicsImaging/Reference/CATiledLayer_class/Introduction/Introduction.html
With it you can even load different image tiles based on how far you are zoomed in, just like Google Maps. It will render without borders and the performance will be WAY better than using lots of subviews. Subviews are expensive, layers are (generally) cheap.

around this issue Instead of overriding drawRect:, use the scroll view's setBackgroundColor: method, passing the NSColor you created with the pattern image.

help you fix your problem NSScrollView is not like other views. It does things just differently enough that it makes everyone crazy at first, and especially once you've gotten used to Auto Layout thinking. It is also one of those views (along with NSTableView, NSOutlineView and NSCollectionView and more) where there are a lot of pieces to set up before you can start seeing things working. Auto Layout adds to this a bit, too.
NSScrollView contains at least 3 subviews by default:
