So you can make your own theme.

fixed the issue. Will look into that further Disclosure: I am the author of the magento mobile theme that you mentioned at http://smarttheme.cryozonic.com/installation.
Just to avoid confusion, Magento comes with a stock mobile theme that you can configure, and then you have a number of developers writing commercial mobile themes with a different set of features, design and functionality. If you are wondering how to enable the default magento mobile theme you can follow the instructions at http://support.createhosting.co.nz/knowledgebase.php?action=displayarticle&id=51. The default theme has a different design from the one you mentioned, which you can try out here: http://smarttheme.cryozonic.com/demo

will help you From inspection the responsiveness is due to the CSS (rather than browser detection or serving a different theme based on the UA of the request).
If you inspect the page source you should spot the code that is controlling the responsiveness:
code :
<script type="text/javascript">
var ADAPT_CONFIG = {
  path: "http://www.trend-store.nl/skin/frontend/default/galamrhandsome_black/css/",
  dynamic: true,
  range: [
    '0px    to 760px  = mobile.css',
    '760px  to 980px  = 720.css',
    '980px  to 1200px = 960.css',
    '1200px           = 1200.css'
  ]
};
</script>
<script type="text/javascript">
  var ADAPT_CONFIG = false;
</script>
<script type="text/javascript">
var ADAPT_CONFIG = {
  path: "http://www.trend-store.nl/skin/frontend/default/galamrhandsome_black/css/",
  dynamic: true,
  range: [
    '0px    to 760px  = 960.css',
    '760px  to 980px  = 960.css',
    '980px  to 1200px = 960.css',
    '1200px           = 960.css'
  ]
};
</script>

this will help I presume you've come across this but Magento can change the theme based on user-agent. Set this in the design tab of System->Configuration. You 'Add Exception' and include a list of mobile user agents, for example: iPhone|iPod|BlackBerry|Palm|Googlebot-Mobile|Mobile|mobile|mobi|Windows Mobile|Safari Mobile|Android|Opera Mini
Then set the theme you want to show if the regex matches, in my example I just use the default iphone theme that's in skin/frontend/default/iphone. I presume you can set different mobile themes for different websites and store views.
